Chocolate-Covered Nut Butter Protein Balls
This recipe is from the meal plan that my coach, Christina Lombardi, RD from Designed To Fit Nutrition created for me earlier this year. It makes 6 balls, which is good for your first run so you can make sure you like them and good for one week for one person. In the DG house, now that we've aligned on the best protein powder and nut butter, we double the recipe.
1/4 cup protein powder of your choice (We use Vega Vanilla Protein & Greens. We tried chocolate, but it was a bit much for us.)
1/4 cup creamy nut butter (We use SunButter Organic Sunflower Seed butter because CDG doesn't like peanut butter, but any nut butter will work.)
2 tbsp brown sugar
2 tsp coconut oil, melted
1/4 tsp vanilla extract
1/4 cup dark chocolate chips (I use a little more than 1/4 cup because it doesn't seem to cover all 6 balls)
1/2 tsp coconut oil
Combine ingredients for filling in a small mixing bowl until fully blended. Divide batter and roll into 6 balls. Refrigerate balls for 2 hours until firm (I leave them in the fridge overnight. It probably doesn't make a huge difference, but it's what I do).
Once they're ready, combine the chocolate chips and coconut oil in a microwave-safe bowl. Heat in the microwave in 30-second intervals, stirring in between, until chocolate is fully melted. Roll balls in melted chocolate and then place on a plate/tray with parchment paper. Place plate/tray in refrigerator and allow chocolate to harden before enjoying (again, I just leave them overnight). Try not to eat them all at once! ;) (That line is in the actual recipe, but I echo that statement... they're so good, you'll want to eat them all!)
